Our kitchen

Open fire, heritage spice, and produce picked the morning it's served.

Chef Ama Mensah cooks the food she grew up on — reimagined over live flame and plated with quiet precision. Every dish carries a story; every table gets the same care.

Meet the chef

Three generations of fire, one unmistakable hand.

Born in Kumasi and trained across Accra, Lisbon, and New York, Chef Ama Mensah built Saffron around a single belief: that the food of West Africa belongs at the center of the table, not the margins of a menu.

She cooks almost everything over open flame — the way her grandmother did — pairing heritage spice with whatever the morning market offers. The result is a kitchen that feels both rooted and entirely her own.
